The increase in
the world population day by day leads to an increase in the need for nutrition.
However, in Turkey, up to 40% of losses are experienced in the process of fresh
fruits and vegetables from producers to consumers (Tümenbatur and Tanyaş, 2017:
36). This situation reveals the necessity to prevent deterioration along the
supply chain. Breaks in the cold chain processes along the supply chain and
problems in the management of the process constitute an important part of these
losses. In addition, almost all food transport in Turkey is carried out by road
transport. However, there is no adequate
inspection system for the transport of fresh fruits and vegetables by road.
This situation jeopardizes food safety and the wastage caused by the
deterioration of most of the food causes changes in food prices. The
technologies, models, and applications that can be used to plan supply chain
processes and logistics processes accordingly to monitor, identify, and prevent
changes in product shelf life are the subject of this study. In addition,
examples of applications in Europe, legal requirements, and regulations in
Turkey are discussed in the study. In addition, studies on this subject in
different parts of the world and the results obtained are discussed.
